Things that are round

Biscuit tins…


and a wheat-free peanut butter cookie 
(wish i could say I ate just one)



Things That Are Round Cookies

adapted from this recipe 

3/4 cup peanut butter, (I used chunky)
1/4 cup butter (because old habits die hard), 
1 egg plus 1 egg white,
1/2 tsp vanilla,
1 scant tsp baking soda
1/2 cup brown sugar, 1/4 cup confectioners sugar
generous 1/2 cup rolled oats, 1/3 cup coconut flour
(you can twiddle with these dry ingredients to suit yourself, substituting sorghum or oat flours)
1/4 tsp salt, and a half package chocolate chips

I didn't have to flatten the first batch cause the freshly-mixed dough was quite loose, but chilled dough the next day did need the fork and flatten routine.

Bake about 10-12 minutes on a parchment covered cookie sheet in a 350 degree oven.
